I do not like jalapeño. In fact, I won’t touch anything stronger than black pepper. I can’t do spice in any amount and have super sensitive taste buds. My husband on the other hand, has fried his tastes buds eating ridiculously spicy things. I passed by a jalapeño popper recipe on pinterest and was inspired! This recipe literally took less than 15 minutes to throw together and Ethan LOVED it.
Ingredients:
Jalapeños- as many or few as you like. I used 7
3 Chicken breast
1, 8oz cream cheese
1 cup sour cream
Colby Jack Cheese to taste
- Preheat your oven to 375. Cut your jalapeños in half, and remove the seeds and core.
- Add the jalapeños to your food processor with the cream cheese, sour cream, and a good handful of colby jack. Run until the jalapeños are in small pieces, and the mixture is smooth.
- In a 13×9 pan, add your chicken breast. Spread the jalapeño-cheese mix on top. Sprinkle with additional colby jack. Cover and bake for 20 min.
- Remove the cover to bake for 10 minutes. If you like a crispy or well done cheese on top, place under the broiler.
Serve hot!
