Jalapeño Popper Chicken

I do not like jalapeño. In fact, I won’t touch anything stronger than black pepper. I can’t do spice in any amount and have super sensitive taste buds. My husband on the other hand, has fried his tastes buds eating ridiculously spicy things. I passed by a jalapeño popper recipe on pinterest and was inspired! This recipe literally took less than 15 minutes to throw together and Ethan LOVED it.

Ingredients:

Jalapeños- as many or few as you like. I used 7

3 Chicken breast

1, 8oz cream cheese

1 cup sour cream

Colby Jack Cheese to taste

  1. Preheat your oven to 375. Cut your jalapeños in half, and remove the seeds and core.
  2. Add the jalapeños to your food processor with the cream cheese, sour cream, and a good handful of colby jack. Run until the jalapeños are in small pieces, and the mixture is smooth.
  3. In a 13×9 pan, add your chicken breast. Spread the jalapeño-cheese mix on top. Sprinkle with additional colby jack. Cover and bake for 20 min.
  4. Remove the cover to bake for 10 minutes. If you like a crispy or well done cheese on top, place under the broiler.

Serve hot!

*Shred the chicken to make a jalapeño popper chicken dip, for a get-together crowd pleaser!*
